Ceska Kuchyne Woking..
So, on Saturday we had our inaugural meal prepared in the "Ceska Kuchyne, Woking": that's the Woking Czech Kitchen in case you wondered. Originally I'd thought that we'd start off with the soup and go straight on to the main course fish, but having seen the size of the fish it was decided that we'd have the soup for lunch and the fish as an evening meal. On the menu was Czech Onion Soup followed by Baked Carp with Chillies and Broccoli. I had planned to include bread dumplings but be honest we  couldn't have managed! So here's the story of the meal, and please check out the pictures!

As promised, I wanted to cook V something very Czech following the delicious meals we'd had in Prague over Xmas, and she'd taken such a fancy to the traditional Xmas dish of carp that I thought it would be fun to try cooking it. A visit to Morrisons on Friday really paid off, and I was able to buy the solitary carp that was languishing on the bed of ice. This particular specimen was labelled as being French and had that classic Gallic look of sang-froid on its face: the ones the Czech eat are normally more like the type seen in garden centres. I asked the fishmonger to prepare it for me, and was duly presented with a bagged, headless, gutted carp: success! I then had to get white onions for the soup along with some crusty cottage loaves: these would be used as soup bowls (another Czech tradition) and I sourced a couple of tasty and fragrant Lemon and Pumpkin-seed loaves for 99p each. I already had Emmental cheese, so all that remained was to get some broccoli to accompany the fish and some more Paprika. Total cost for the meal was about £20. Although I prepared the fish first, I'll relate the tale in "course order".

The Soup

The Czechs have a fine tradition of serving hearty food, especially soup, sometimes in a crusty loaf. The loaf is hollowed out and a lid is cut out to help keep the food warm between oven and table. I bought the loaves on Friday and left them on the kitchen worktop overnight so that the fresh crusty exterior would harden a little, preventing the soup from leaking out. This worked quite nicely and I proceeded to cut out the lid using a sharp knife at an angle so that it didn't just drop straight into the soup. With the lid out, I then cut the bread core out vertically and saved it for making breadcrumbs later. Next I chopped two large, very fresh white onions which were then sauteed in olive oil. Once that was complete I added half a 500ml bottle of beer: the recipe called for Black Lion beer, but as I can't get this locally I used Black Sheep ale instead. Ideally it would have been a dark Czech beer equivalent but Guinness would have been a bit too heavy: the Black Sheep was an excellent substitute though. I turned the heat down a little and continued to cook the beer/onions until the beer no longer bubbled (about 7 minutes). After that, I tipped the contents into a normal pan and simmered for 20 minutes, adding 1/2 pint of water and salt and pepper. Once that was done it simply a matter of adding a generous amount of grated Emmental cheese and stirring it in until it melted. I tipped the thick soup into the two loaf bowls and served: there was practically no leakage and on finishing the soup we did our best to eat the bowls :-) Delicious, and we'll definitely do it again. We both had a bottle of chilled Staropramen which complemented the soup very well. The only thing I'd do different next time though would be to add more water as the bowls had a larger capacity than I'd thought.

The Fish

The Czechs traditionally eat carp at Xmas and both of us had several carp meals in Prague. The fish itself is light in flavour and despite being quite boney, there's a lot of meat to be had from a typical fish. All the meals we had there were fried in breadcrumbs, but I wanted to bake it in order to preserve the flavour. First task was to prepare the fish: the fishmonger had washed, gutted and decapitated the fish but the backbone and fins were still on. I'd never prepared a fish to that extent before and decided to check out some YouTube videos to see what to do. I eventually cut out the thick backbone and removed the fins with a very sharp knife. There were only a few scales left to remove and these were very large; about the size of adult thumbnails. I considered skinning it but decided against it as I didn't want the flesh to flake during baking. A quick wash (the fish I mean) and I was left with two substantial fillets. I was actually a bit over-generous with the trimming, but even so I ended up a large amount of useable fish: next time I'll be able to improve my technique.

Next job was to make some breadcrumbs, and for this I used the delicious bread cores from the soup bowls. Rather than spend an hour crumbling bread by hand I decide to use my long-suffering electric hand blender from Argos - just over 4 quid and actually very powerful. I ignored the screams of protest from the tortured machine and was left with a bowl of breadcrumbs: lemon scented and no waste! I also added a few carraway seeds for extra flavour.

The fish was nearly ready for baking, so V buttered a large Pyrex dish. At the same time I coated the fillets in beaten egg, and then liberally coated them in the breadcrumbs. Then a light dusting of paprika and finally topped off with some sliced, allegedly "medium hot" chillies. Oh, and a few more carraway seeds.. Into a medium-high oven for 20 minutes and turned once. As you can see, the fish came out beautifully cooked although the presentation was somewhat let down by the breadcrumbs which didn't quite adhere to the fish properly (apparently the ones in Czech were deep-fried and didn't have this problem). However, the flavour of the fish more than made up for this, and the meat literally fell off the bones. The broccoli was also beautifully tender and wasn't too strong to overpower the flavour of the fish. Again we had bottles of Staropramen with this course and it added a very authentic touch to the meal.

As stated, we had intended to cook the famous Czech bread dumplings (not like your mother used to make), but we were so stuffed from our hearty soup that we decided not to bother. Even so, we intend to experiment with this delicious dish and I'll be reporting on the success, or otherwise at a later date.

To finish the meal we had Gu Cheesecakes in ramekins - very rich and a perfect complement to the subtle flavours of the previous courses. And of course, the inevitable but mandatory Becherovka liqueur.. The meal was deemed a success and we'll definitely be doing it again: we'll write it all up of course and maybe you'll be inspired to try some for yourself. Na shledanou!

Smaller portions, but tasty..
As we work well in the kitchen together, we decided to indulge in a spot of nouvelle cuisine for an evening meal, especially as we'd had a rather substantial soup for lunch. So off to Morrisons where we landed two fine swordfish steaks for 8 quid: we baked one with chilies, sweet potato and a healthy bundle of curly kale. A delicious, nourishing meal for 2 for about a tenner, followed by steamed rhubarb and apple with vanilla yoghurt topping. Come back soon for the next episode!

Not quite as planned ..
The plan yesterday was to go to London and photograph some of the new building work for the forthcoming Black and White magazine. To find that the day was hot and sunny was a real bonus, and I set off with my gear. Once in London I decided to head for the East End on the DLR and ended up at the intriguingly-named Mudchute. To be honest, I wasn't feeling inspired and so decided to go for a trudge around  the Mudchute Park and Farm. The park itself was okay, but the farm seemed rather forlorn, with a handful of rather lethargic and miserable ducks in a pen. In contrast the stables and the horses in general looked immaculate but to call it a farm was, I thought, bending the truth a bit. Somewhat disheartened I trudged back to the DLR and went back to Heron Quays to see if I could find inspiration there. Sadly not, but I did notice an inordinate number of signs telling me what I couldn't do. Despite the fact that there was nothing specifically forbidding me to take pictures, I couldn't be bothered to do so, so I cut my losses and went off to see V who was just finishing off her TEFL assignment.

I'd jokingly said earlier that i'd pop in for a "cuppa tea and a bun", and bless her, she'd actually gone out and bought buns :-) We had those over a chat and went out for a walk in the summer sun. Again, lots to discuss and our plans for Q1 of 2009 look to be on course.. We went back via the pub and drank white beer as the sun set over London.

This morning i'm back at London Bridge-it's a misty, drizzling morning and I'm hoping to take some pictures that I didn't take yesterday. We'll see though..

Today's menu..
On today's menu we start off with nutty soup, made with red lentils, organic peanut butter, sieved tomatoes, toasted garlic, coriander and tarragon. Accompanied by home-made bread topped with pumpkin seeds. Main course is tofu stir fry, dry fried and marinaded with hoi sin sauce and a measure of Harveys Bristol Cream. Accompanied by boiled saffron rice and Chinese vegetables. Dessert is creme caramel topped with chocolate shavings. Chocolate-dipped strawberries with cava brut to follow. And you thought blokes could only cook pizza ;-) Bon appetit!

A fantastic sunny day here in
A fantastic sunny day here in Woking so i've decided to pack my camera bag as if i'm off on a Euro assignment. I've managed to fit a change of clothes as well as wash kit - oh, and a camera - into my trusty Crumpler. It's the ultimate hand-luggage and works well. I also have a  separate bag full of TEFL course books for V who i'm sure will make much better use of them than I ever did! She sounded happy on the phone last night and keen to sort out where we are going: it'll be an interesting weekend thats for sure. Talking of going places, i found out that Easyjet are now taking bookings for November flights so if V and I can agree dates we'll be booking to go to Amsterdam in November and from there by rail to Rotterdam to (maybe) see Ferry Corsten in concert and take in some museums as well. Whether we have to pay to go to the party depends on one man, and i'm still waiting to see if I can get a press pass and guestlist for V. Time alone will tell but I wish he'd hurry up :-) That's all for now-check back later(hopefully) for pictures of Battersea and environs.

A London wet(lands) day..
Another fab weekend in London with V, yesterday spent chilling, walking around the park and cocktails in the evening. The sun came out later and we sipped wine in a  new bar in the High Street: all very civilised and the company was good :-) Sunday was spent at the Barnes Wetland Centre, near Putney looking at a variety of wildfowl in what must be one of the most well-designed vegetation environments in the country. I'd been to similar places before when I was a lot younger but this centre was aimed more at the serious bird enthusiast. There were several hides and for once i'd decided to leave my camera at home, so I missed out on some great opportunities :-( There were plenty of fowl just strolling around though and very tame too. The difference between this site be others was that visitors are not allowed/encouraged to feed the birds and consequently they forage just as they would in their natural environment. Well worth a visit and we'll be going back there later this year (with camera).

I'm now back from Chelmsford and have just had time for a quick but much-needed shower before heading off to London to spend the evening with V. After a day spent mainly on trains it's a small price to pay for an evening of pleasure. L8rs!

Nice weekend..
Although it was rather ironic that Midsummer's Day was marked by grey clouds and patches of rain, our planned trip to Windsor, Eton and round about went really well. We met at Clapham Junction and took the train to V's friend's house. There wasn't much time to hang around and we were soon off to an end of term bash set in a small club in Windsor Great Park. Around 50 people turned up and the bash was complete with a disco playing all the hits from the 70s and 80s: quite a change from my usual  genres but it brought back so many memories for us, and the first time around we'd both been in our teens :-) There was food too: curry and naans which were very tasty.. Of course, we drank far too much and I eventually woke up at 3am with a banging hangover: at least I waited until 5.30 to wake V .. I'm a real gentleman y'know ;-)

Sunday morning was spent having a rather quiet breakfast with some very strong coffee, and then a stroll into nearby Windsor town, followed by a look around early-morning Eton. It's all such a very different world and I can't help wondering how much longer it can go on for. I think as long as we have a monarchy though, the lifestyle will be safe. As the sun got much hotter, we walked back across a playing field where they were playing cricket - all so very British. Back to the house and straight out for another walk! It was such a nice day we'd decided to go out for a pub lunch and parking in Savill gardens car park, we walked around Virginia Water, Valley Gardens, saw the obelisk, the totem pole and what looked like a temple ruin. V's friend was convinced that "we only walked 4 miles or so" but to us it felt more like 10! It was such a pleasant afternoon and the weather was superb; just like the summer we'd been expecting so long and had finally arrived.

We drove back to the house again had a quick cuppa and set off back to our respective homes again: parting at Clapham Junction was difficult and although we're seeing each other again next weekend it doesn't make it any easier. I finally got back to the apartment about 8.30 and feel asleep in the chair sorting out the weekend pictures. One thing we're both conscious of is that we can cram so much into a weekend, and it really is a case of taking it easier in the week. See you later!

Fun in the sun..
Having spent a week in an abysmally air-conditioned office its time to get busy and have some fun in the sun. I've just got on the train to London to go and see V, the its off to the Big City to see some galleries and generally chill. I'm under a heavy load today as i'm taking birthday presents with me-two books (large, heavy) and something a bit smaller too. Tomorrow i'm having a try at yoga for the first time-last weekend it was meditation which was great. Hopefully i'll still be in a position  to move afterwards but if not i'll just have to stay in London with V.. hmmm, now that's a thought-maybe it's all part of her cunning plan! I dunno, she'll be suggesting we run away together next ;-) see you all later. Maybe..

Country Weekend..
The weekend turned out to be one of our best yet: V arrived in Woking at a very civilised 10am and had time to have a drink and a chat before setting off for Alton and district. We found the guest house without too much trouble despite it being in the middle of the countryside (link in "More"). Unpacked quickly and then straight off to Selborne to take in the infamous and exhilarating "Zigzags" walk up to Selborne Common. From there to Newton Valence to feed the ducks.. but.. no ducks! Not a  bird to be seen, despite the fact that we'd taken the best part of a wholemeal loaf to feed them. Still, undeterred we had a look around the church of this tiny settlement before heading off down the road back to Selborne. As we didn't want to do a lot of road work we went back via the other side of the forest and ended up going back down the Zigzags again. Into the pub for a swift half and a warm-up by the log fire and then back to the guest house before the evening meal. Sunday saw us back in Selborne via Chawton (Jane Austen's house), Alton, then wandering around the Selborne Gallery and Gilbert White's House. We returned to Woking late afternoon after a very full weekend of inspiring walks and some very happy memories.

Off to London..
Big day today.. meeting friend up in London then on for a day of galleries, museums and chat: no doubt there'll be some pubs along the way as well ;-) In the evening I'm off to a double birthday party in Farringdon which promises to be a riot if the people involved are on form. I'm also taking the camera for its first outing this year so with luck I'll post some new pix in the galleries on Sunday, assuming I can still keep my eyes open! L8rs!

Just when you're not looking..
Just when you're not looking, it happens. As a result of a very random enounter at the recent Tiesto gig I now appear to be off to Prague in September to see another King of Trance, Paul Van Dyk. Tickets for about a tenner (!), accomodation for not a lot more, and a travelling companion who spookily seems to have exactly the same mind-set as me is going to make for a very interesting weekend indeed. I'm definitely looking forward to it but am still rather bemused.. more as it happens!

Living on borrowed time..
Although the snow continues to fall intermittently and the temperature leans almost towards cold, I couldn't help thinking that my new friend Frosty is living on borrowed time. Although we only met yesterday evening, this morning he was a shadow of his former self and by the time I get home tonight I fear he may have shuffled off this mortal coil... *sniff*. I'd stick him in my freezer but it's way too small. But in the UK snowman stakes, he had a good innings, and that's all that matters eh ?

Whoops!..
The lucky black blog cats could only manage a day and I didn't have time to blog yesterday. So, here's a quick "placeholder" rundown.. The "absolute" moves one step closer after a meeting with my solicitor today. Two friends are going back to South Africa today: one for a while, the other for, well, who knows: just when you get to start to know someone they up and leave. We shall see though. My potential Prague job looks unlikely to happen, but at the same time other doors may be opening. All  very much up in the air and my solicitor is as intrigued as I am. I'll blog again soon and maybe i'll be able to explain more..
